Dried figs, vanilla cream, allspice, blackberries, wild cranberry & raspberry, caramel, butterscotch, dried red flowers, violets, hints of spearmint, pine. Palate is dried-berry driven, concentrated yet lifted. 100% Sangiovese, foot crushed, wild yeast fermentation, whole-cluster, long maceration in concrete tanks, then aged in concrete. Concrete is the special ingredient, with its somewhat porous nature allowing breathing of the wine without imparting notes from typical wood barrels. The winery was founded rather recently for the old world, in 2013, with a singular goal of purity. They are creative, exploring the possibility of the terroir.
