Toasted cranberry, crushed violets, sweet boysenberry, rustic pine, roasted caramel. Palate is dry with red and black cherry notes, pomegranate and grassy herbs. Quercus is a blend of the well-known Garnacha grape, which is thought to be indigenous to the Aragón region, as well as the lesser-known Miguel de Arcos grape which Juanvi is passionate about saving and featuring in their wines. A small-scale, artisan winery established in 2008, they craft their wine by farming 15-50 year old vines organically; Fermentation occurs spontaneously with indigenous yeast then rests for six months in barrel before transferring to concrete tank.
